Make-Ahead Mashed Potato Casserole

(Can be made up to 1 day in advance)

5 pounds baking potatoes (russet, idaho, burbank, or eastern)
One 8-ounce kg cream cheese, cut into chunks, room temperature
1 cup sour cream
1/2 cup milk, heated
salt
1/2 tsp freshly milled white pepper (can use black if you don't mind specks in your spuds.)

Fill a alrte pot (at least 5 quarts) halfway with cold water. Peel potatoes, cut into chunks about 1 1/2 inches square, and drop into the pot. Add more cold water to cover the potatoes by 1-2 inches. (The potatoes can be prepared up to this point for up to 4 hours ahead and stored at cool room temperature.)

Stir in enough salt until the water tastes mildly salted. Cover tightly and bring to a full boil over high heat, about 20 minutes. Reduce heat to med-low and set lid askew. Cook at a moderate boil until potatoes are tender when pierced with the tip of a small sharp knife. 15-20 minutes; add more boiling water, if needed, to keep the potatoes covered. Do not overcook.

Drain well and return to the warm pot. Add cream cheese. Using a hand-held electric mixer, mash potatoes until the cream cheese melts. Beat in sour cream and milk. Season with 1 tsp salt and pepper. Transfer to a buttered 9x13 baking dish. Cool completely. Dot the top with pats of butter. (The potatoes can be prepared up to 4 hours ahead, covered loosely with plastic wrap, and stored a cool room temp; OR, cool, cover TIGHTLY with plastic wrap, and refrigerate for up to 1 day.)

Preheat oven to 375ºF.

Bake casserole until potatoes are heated through, 30-40 minutes. Serve hot.
Sprinkle with fresh chopped chives or parsley, if desired.

****If you only have one oven, this is how you time it for a holiday meal: take out your turkey, increase the heat to 375 (which should just take a minute or two), and pop the spuds in the oven while the bird is resting.

Bacon and cheese potatoe wedges-

Bake some potatoes until pretty much done. (I do this in the microwave)
Let them cool enough so that you can handle them, then cut them lengthwise into 4 wedges (skins on).
While the potatoes are cooking, fry up some bacon. Save the grease.
When the bacon is done place the potatoe wedges in the hot bacon grease and brown on each side. Drain on paper towel then put them on a plate. Top them with some shredded cheese and pop them in the microwave long enough to melt the cheese. Then crumble the bacon and sprinkle on top of the cheese.
(You don't HAVE to fry the bacon, you can use store bought bacon bits and just fry the potatoe wedges in some oil. But the bacon grease is better.)
These are awesome dipped in ranch dip,, I use the Hidden Valley ranch powder in a packet and add it to a container of sour cream,, yum!

Extra Good Mashed Potatoes

5 lbs Potatoes, pealed, cooked and mashed
8 oz. Cream cheese, Softened
1 1/2 C. Sour Cream
3 t. garlic salt
1 1/2 t. salt
1/2 t. white pepper (you can use regular, but the white doesn't show)
2 T. melted butter

Combine all ingredients.
Pour into crock pot. Cover. Cook on Low.

You can put these in the fridge for up to 4 days before your dinner. Pull out of the fridge and put your crockpot on low for 4-6 hours... (watch that they don't start to get crusty... stir occasionally.) If you are in a hurry... or don't want them to cook so long, Microwave them until they start to warm up and then put in the crock pot.

Sweet Potato Casserole

3 lbs yams ( I use canned, but if you want you can make fresh)
2 eggs
1/4 C.brown sugar
1/4 C. Melted Butter
1t. salt
1t. cinnamon
1/2 to 1 C. Orange Juice

Mash Yams in mixer. Add everything except OJ. Add OJ a bit at a time until fluffy and moist.

Pour into Buttered Casserole

Mix 1/2 C. Chopped Pecans
1/2 C. Brown Sugar
1/2 C. Melted butter.

Put on top of yams.

Cook uncovered at 375 for 30 minutes.

My sweet potato and marshmallow dish

3 large cans of sweet potatoes. Drain and put in a saucepan. Add about a half cup of sugar, about 3 tbs of butter, and about 2 tsp of vanilla (all to your taste preference). Heat and mash.
Now add in about a cup and half or so of mini marshmallows and stir. Then pour mixture into your cassarole dish and cover the top with marshmallows. Put in a 350 degree oven til the marshmallows are melted and just start to brown.
Very yummy.

Roasted Parmesan Potatoes

Ingredients:
4 medium russet potatoes, peeled or unpeeled
1 TBSP vegetable oil
3 TBSP grated parmesan cheese
2 TBSP chopped fresh parsley, or 2 tsp. Dried parsley
1 tsp. paprika
tsp. garlic powder
1 tsp. Salt
1/8 tsp. Cayenne pepper

Directions:
Preheat oven to 450 degrees. Line a baking sheet with
aluminum foil and spray with non stick cooking spray. Cut potatoes into
inch cubes.Place potatoes in medium bowl and toss with oil. Combine
parmesan, parsley, paprika, garlic powder, salt and cayenne pepper with
potatoes.Toss potatoes to coat evenly. Arrange potatoes on prepared
baking sheet. Bake, turning once, until potatoes are lightly browned
and easily pierced with a knife, about 25 minutes.
